Do not be fooled by her name, Jessica Smith  is anything but common.  Kestrel Wineries’ own in-house Chef is confidently one of the best Chefs in the Northwest.  Residing in the heart of Washington Wine Country, Chef Jessica uses the freshest, most authentic, local ingredients to create her dishes.  Chef Jessica’s home base of Kestrel in Prosser lends a multitude of ingredients within her reach.  Having lived on all four corners of the United States, Jessica has a reason for choosing Yakima Valley in her Food and Wine Odyssey.  Talking about the Pacific Northwest’s diverse climates and micro-climates she posed this question “Where else in the United States can you harvest a fresh Kumamoto Oyster from Oakland Bay and in the same fell swoop obtain a freshly picked chili pepper from Sunnyside Washington, to contend with the best bivalves and chilies in the world?”   Washington State is being recognized as a budding culinary destination and Jessica Smith is not going to miss the opportunity to be a pioneer in it’s evolution.
